Lonza, one of the leanest cuts pork, is dry salted and seasoned with pepper and spices, packed into natural casings and tied by hand. At the end of the drying process, the true and proper aging of four months begins. A slice of it has a uniform pink color. With slightly peppery flavor, Cured Lonza is great to enjoy with rucola, parmigiano and balsamic vinegar.
