Porchetta is a roast that contains all the parts of a single pig. The meats are salted and spiced with a mixture of ground black pepper, cinnamon and cloves and flavored with rosemary, sage and bay leaves and then it is massaged so that each piece has the right flavor. Then, it is seasoned with extra virgin olive oil and cognac, tied by hand and cooked in the oven at 180°C.
