Spalla Cotta is a delicious salumi. It is salted and skillfully tied by hand in order to give it  its characteristic shape. It is cooked at a low temperature in water, red wine, vegetables and herbs that endows it with fragrance. It can be eaten cold or to better appreciate the sweetness and gentleness of the meat, it can be eaten hot.
